How do you make apple pie better? Miniaturize it!
Good things come in small packages, right? I am so excited to show you how to make these! And even more excited that I get to give away some of my favorite kitchen tools so you can make these too! Priority Ministries’ mission is to encourage you to love God most and serve Him in every area of your life- even in the kitchen! For the mini apple pies, start off with a bowl full of apples. One of my favorites for pies is Jonagold, but if they are not in season Gala or Golden Delicious are great as well.

Now on to peeling and chopping!
And if you feel the need to practice your carving skills on an apple, please do and then send me a photo! Peeling is a lot easier with a Y peeler and that’s why Priority is giving one away! You can Glo while you peel!
If you are me then after chopping all your apples, you will remember that basket full of laundry that needs to be folded…
…and get totally sidetracked from making apple pies because… baby+laundry= folding everything 3 times at least (that’s called mommy math). She hands me each item of clothing at break-neck speeds and if I can’t fold fast enough she gets impatient and throws them behind her – hence the pile on the floor. Good thing she’s super cute huh? Now you see why I totally forgot to take a photo of the luscious cinnamon sugar mixture that I sprinkled over those chopped apples. Sorry ’bout that! The recipe is at the bottom of this post so you can have all the details.
For the pie dough I use this handy pastry blender to cut my butter and shortening into the flour. Forks and fingers work well too though. Keep at it until you get the bits down to tic-tac size(which is smaller than an m&m, but bigger than a nerd). Everyone else says pea size, but I like to be different. Don’t you? Plus, it’s almost Halloween and I have candy on my mind. A quick finger hug test can help you tell if you’re there.
If it sticks together pretty well then it’s time to sprinkle some water over it, form it into a ball and bring it to your rolling mat. These silicone rolling mats are a must have for pie dough.
After you cut out 2 inch circles then dollop a bit of the delicious apple mixture on top.
Mmmm… Grab another dough circle and gently stretch it over the filling. Crimp the two edges together with a fork and give those little cuties a brush with egg wash. Lookin’ good.
Now all that’s left to do is bake them and marvel at your mini masterpieces!

Mini Apple Pie Filling: 1 cup sugar 3 Tbsp flour ½ tsp cinnamon ⅛ tsp nutmeg 1 tsp coriander 6-7 cups peeled and cubed apples (about 4 extra large apples) |
Pie Dough: 1⅓ cup flour ½ tsp. salt ½ cup shortening ¼ cup cold water |
Make Filling: Combine all ingredients in a large bowl. Let stand for 30 minutes while you prepare the pie dough. Preheat oven to 375˚.
Make the Dough: Combine flour, salt and sugar in a large bowl. Cut in butter and shortening with a pastry blender until mixture resembles small peas. Drizzle with ice water. Stir with a fork until combined. (mixture will be crumbly and dry.) Knead mixture lightly and shape into a disk. Divide dough in half.
Roll the Dough: Roll half of the dough out on a floured surface to ⅛ inch thickness. Cut out circles with a 2 ¼ inch round cutter, rerolling scraps as needed. Place on parchment lined baking sheets.
Fill: Drop a small spoonful of apple mixture on top of each circle. Dampen edges of dough. Roll out and cut remaining dough and place on top of each circle. Gently stretch till edges meet, pressing to seal and then crimping with a fork. Cut a small slit in the tops for steam to escape.
Brush and Bake: Stir together egg yolk and cream and brush on tops of pies. Sprinkle with sugar. Freeze pies 10 minutes then bake at 375˚ for 20 to 25 minutes or until lightly browned. Serve warm or at room temperature.
