Is it just me or are we more conscious of eating right this time of year? I have a feeling it has to do with the beautiful array of fresh fruits and vegetables that welcome us to the produce section of our local grocery each week. Right now, it is really easy to make good choices, so I am choosing that road. For you see, my eating habits have been out of control for several months and now I am reaping the sad results. Somehow, one day I am on the right track, the next – oh brother!!!
For the last several days I have been reading and researching several eating plans. In the past, I have done them all – low carb, blood type diets (which really work), low fat, no sugar, point system – just to name a few. But here’s the thing – with a crazy, busy life you must zero in on a plan that is easy and food is readily available wherever you might find yourself. Plus, a huge factor for many of us is the cost of eating right. This is where your local farmers market enters the picture. It really is quite easy once you have found a good market and a relaxing trip on the weekend is always welcomed and provides benefits all week long.
A few years back my husband and I took a four-week wellness class taught by a doctor/nutrition specialist. We studied our various eating patterns and soon discovered the Mediterranean Diet (with a few adjustments of items higher in fat content) really fits the principles we are to follow. So with that said – I am on my way. However, do some research and find what best fits your tastes and lifestyle. Remember, this is a life-style change not a quick remedy.
This week’s recipe is a delicious variation of the diet. Enjoy this easy and fabulous salad!
